In this laboratory, there is a HPLC (High Pressure Liquid Chromatography), UV-VIS spectrophotometer, FTIR, particle size distribution device, Texture analyzer, viscometer (rheometer), DSC (Differential Scanning Calorimeter), polarimeter, polarized light microscope, soniprep device, ultrasonic water bath, homogenizer and deionized ultra-pure water device. There is a vacuum pump, HPLC (high pressure liquid chromatography) device, and sample preparation equipment. The liquid chromatography device has a UV detector, Fluorescence Detector, and RID detector. Using these detectors, the analysis of various vitamins in foodstuffs, the analysis of natural food pigments such as phenolics, carotenoids, chlorophyll, and anthocyanin, and the fatty acid composition of foods are examined. In these laboratories, thermal properties of various food ingredients can be examined with DSC (Differential Scanning Calorimetry). In addition, the flow properties of foods can be investigated in detail with the existing VISCOSIMETRY (rheometer), and the texture of foods can be investigated in detail with the Texture Analyzer device.
